Is there a way to reposition the cover image? Or should I resize it to get it to display fully within the viewport? If resizing is the recommended path, what would be the proper size?

There is no easy way to achieve this I’m afraid.

But feel free to suggest alternative layouts which I might add to the Template set.

Okay, thank you. The precise issue I am having, is that I create a collage with text to the left side. When the Cover Image is displayed, it cuts off a portion of the text within the image.
